0 kilometer philosophy - 100% taste. In a 0 kilometer menu, the kitchen team of Kartause Ittingen combines the best ingredients from its own butchery, market garden, farm cheese dairy, wine cellar, orchards, granary, wood oven bakery as well as from the fish farm.
The range of products depends on the season and on what the surroundings, the vegetable and herb gardens have to offer. In addition to the obvious, these include edible flowers for garnishing plates, Ittingen popcorn corn for the seminar break, or verjus, a fine acidifier made from unripe grapes. For products that cannot be supplied by the estate's own farm, 95% of Swiss products are used; preferably from selected local and regional producers. Meat comes from our own animals or from other farms in the vicinity.
