Early morning on Lake Thun: this is where tradition and sustainability meet when Johannes von Gunten, a professional fisherman, and Beat Bührer, host at Parkhotel Gunten, cast their nets.

Johannes von Gunten, an experienced professional fisherman, and Beat Bührer, the charismatic host at Parkhotel Gunten, meet in the early hours of the morning on picturesque Lake Thun. Despite their different professions, they are united by a shared passion for water and fish, coupled with a pronounced awareness of quality. As they haul in the nets, von Gunten's extensive experience becomes obvious: the nets are full to bursting with Brienzlig, underlining the abundance and quality of the catch. Lake Thun, known for its diversity of whitefish species and as one of the best whitefish waters despite its relative lack of food, is carefully monitored to ensure the sustainability of the fish stock.

After a successful catch of three crates full of whitefish, they return to the shore to carefully process the fish. Bührer, who relaxes while scaling and filleting the fish, plans to present von Gunten's catch to his guests at the hotel later on. Von Gunten and his family are welcome guests at the renowned fish restaurant at Parkhotel Gunten. Here, the "Fischerteller Johannes" and the popular Lake Thun whitefish crispies are not only a culinary delight, but also an expression of the close relationship between the fisherman and the hotel.
